The Cabernet Franc was harvested from the Sacchau block in the Livermore Valley. The Cabernet Sauvignon was harvested from our vineyards in the Napa Valley. The Petite Sirah comes from our Herman block.
Fermentation:
The grapes for this wine were handpicked and hand sorted at the winery prior to being delicately crushed. Fermentation was completed in open-top fermenters and punched down twice daily by hand. The grapes were then gently pressed leaving any possible bitter tannins behind.
Aging:
Malolactic fermentation was initiated and completed in barrel, prior to aging for 17 months in Eastern European and neutral oak barrels.
