Vineyard:

The Cabernet Franc was harvested from the Sacchau block in the Livermore Valley. The Cabernet Sauvignon was harvested from our vineyards in the Napa Valley.

Fermentation:

The grapes for this wine were handpicked and hand sorted at the winery prior to being delicately crushed. Fermentation was completed in open-top fermenters and punched down twice daily by hand. The grapes were then gently pressed leaving any possible bitter tannins behind.

Aging:

Malolactic fermentation was initiated and completed in barrel, prior to aging for 14 months in 33% new Eastern European oak and the remainder in older cooperage.
