Our 2007 Cabernet Sauvignon exhibits aromas of blueberry, cassis, black cherry with a hint of vanilla and cinnamon. Flavors of cherry cola, tobacco and toasted oak create a smooth, rich mouthfeel and a well-integrated finish.

Vineyard:
The Cabernet Sauvignon was harvested from the Golf and Smith vineyard blocks. The Petite Sirah was harvested from the Marina Blocks, and the Merlot was harvested from the Bailey Hill block.
Fermentation:
Both the Cabernet Sauvignon and Merlot were fermented in stainless steel tanks. The Petite Sirah was fermented in 1 ½ ton bins.
Aging:
The Cabernet Sauvignon was aged for 18 months in a combination of French, American, and neutral oak barrels. The Petite Sirah was aged for 18 months in a combination of American, Eastern European and neutral oak barrels. The Merlot was aged for 18 months in a combination of French, American, Eastern European, and neutral oak barrels.9
